INGREDIENTS
3/4 cup butter, softened
1 cup sugar
1 egg
1/2 cup Kukui Brand Pineapple Preserves
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped macadamia nuts
Pineapple frosting (recipe follows)
INSTRUCTIONS
Cream butter and sugar until fluffy; beat in egg and preserves. Stir together flour, soda, and salt; stir into creamed mixture. Fold in nuts. Spread in greased 13 x 9 x 2 inch baking pan. Bake at 350º about 30 minutes. Cool slightly; spread with Pineapple Frosting. Cool thoroughly; cut into bars. Makes 32.
PINEAPPLE FROSTING: Blend 1 1/4 cups sifted powdered sugar, 2 tablespoons softened butter, and 2 tablespoons Kukui Brand pineapple preserves until smooth. Add enough milk (about 1 tablespoon) until of spreading consistency.
